In this workshop, you will learn to PRODUCE FERMENTED BEVERAGES AND FOODS through the use of Jun, a SCOBY (acronym for symbiotic colony of bacteria and yeast). Jun ferments tea and infusions, sweetened with honey. Fermented foods have a recognized beneficial effect on our health. The importance of probiotics is scientifically accepted. Evidence shows that fermented probiotics can: 1. Reinforce the immune system; 2. Inhibit the growth of tumors; 3. Be antibacterial and antifungal; 4. Have a positive effect on the gastrointestinal tract, in cholesterol metabolism and in case of hypertension; 5. And even contribute to our emotional well-being. MATTERS COVERED IN THIS WORKSHOP - 1st fermentation, Maturation and 2nd Fermentation; - Probiotic vinegars and pickles; - Cereals and legumens fermentation; - Proper care and handling of the SCOBYs; - Most common problems & solutions; - The simplest and most efficient techniques to spend minimum time preparing your probiotics - Transportation and time out when on holidays; - And, finally, tasting and recipes!
